Tindora (Ivy Gourd) Salad

 



Tindoras are tiny gourds also known as the ‘Ivy Gourd’. They’re popular in Southeast and South Asian cuisine. Here’s a recipe for a refreshing salad that I serve with curries or sandwiches.



If you like cornichons, you’ll like tindoras; after marinating in the lime juice and salt, it has a sharp tart flavor and the crisp bite of pickled gherkins.



Serves 4
Ingredients:

1 cup Tindoras chopped or 1 med. English cucumber, seeded & chopped
1 lg. tomato(quartered, seeded & diced) or 1/2 cup cherry tomatoes, halved
1/2 of large or 1 med. red onion, chopped
small bunch of cilantro, leaves only, chopped
several mint leaves, chopped (optional)
1 Hari Mirch green chili/Serrano chili(optional), minced
1 lg. lime or lemon, juice only
salt to taste

Mix all ingredients in a large bowl, cover and refrigerate for at least 1 hour then serve. Enjoy!
